Ash Kadou (Zucchini)

Ash Kadou (Zucchini)

Ingredients: 1 large onion; 4 to 5 pieces of garlic; 4 green zucchinis; 1/3 cup rice; ¼ cup split peas; 2 chicken thighs; 1 large cup fresh cilantro, chopped; salt and pepper to taste; 6 cups of water

Directions:

1.  Dice the onion and garlic, then sauté

2.  Add chicken, rice, and peas

3.  When chicken is cooked, add diced zucchini

4.  Put cilantro in at the last minute and turn off heat

Lima Bean Meatballs (Kofteh Baghela)

Ingredients: 1 lb lean ground beef; 2 eggs; ¼ cup chick peas flour; 1 lb peeled lima (fava) beans; 1 cup fresh dill, chopped; 1 medium onion, diced; 4 to 5 pieces of garlic, diced; 2 tablespoons of tomato paste; 1 cup of water; ½ teaspoon turmeric; salt and pepper to taste

Directions:

1.  To make the sauce: Sauté the onion, add garlic, tomato paste, turmeric, salt and pepper, and water

2.  To make the meatballs: Mix all other ingredients (beef, eggs, chickpea flour, lima/fava beans, dill) well by hand and form into medium size meatballs

3.  Put meatballs into sauce; cook for on low heat for at least 90 minutes
