Here are two different types of soups\/aash that you can enjoy.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-3197 alignleft\" src=\"http:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2022\/11\/Soup.jpg\" alt=\"\" width=\"378\" height=\"252\" \/><\/p>\n<h3 class=\"p3\"><span style=\"color: #800080;\"><b>Cauliflower Soup:<\/b><span class=\"s1\"> <span class=\"Apple-converted-space\">\u00a0<\/span><\/span><\/span><\/h3>\n<p class=\"p4\">Recipe from Toba Mohabati &#8211; Toronto, Canada<\/p>\n<p class=\"p1\">Servings: 4-6<\/p>\n<p class=\"p1\"><b>Ingredients:<\/b> chopped cauliflower (about 2 lbs); 2 stalks celery, diced; 1 onion, chopped; 3 potatoes, diced; 2 large carrots, chopped; 2 cups chicken broth; 1 cup water; 2 \u00bd cups milk; ground nutmeg; salt; pepper; 1 \u00bd cups shredded cheddar cheese<\/p>\n<p class=\"p1\"><b>Directions:<span class=\"Apple-converted-space\">\u00a0<\/span><\/b><\/p>\n<p class=\"p1\">1.<span class=\"Apple-converted-space\">\u00a0 <\/span>In a large pot combine the first seven ingredients, cover, and bring to a boil over high heat. Then reduce the heat until the vegetables are soft and pur\u00e9e the vegetables until smooth.<br \/>\n2.<span class=\"Apple-converted-space\">\u00a0 <\/span>Separately heat the milk with the nutmeg, salt, and pepper.<\/p>\n<p class=\"p1\">3.<span class=\"Apple-converted-space\">\u00a0 <\/span>Add the warm milk mixture to the large pot and heat over medium about 5 minutes, then add 1 cup of the cheese.<\/p>\n<p class=\"p1\">4.<span class=\"Apple-converted-space\">\u00a0 <\/span>Pour the soup into bowls and sprinkle with remaining cheese.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-3143 alignleft\" src=\"http:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2022\/11\/ash.png\" alt=\"\" width=\"374\" height=\"355\" srcset=\"http:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2022\/11\/ash.png 500w, http:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2022\/11\/ash-395x375.png 395w\" sizes=\"auto, (max-width: 374px) 100vw, 374px\" \/><\/p>\n<h3 class=\"p3\"><span style=\"color: #800080;\"><b>Pomegranate Thick Soup (Aash):<\/b><span class=\"s1\"> <span class=\"Apple-converted-space\">\u00a0<\/span><\/span><\/span><\/h3>\n<p class=\"p4\">Recipe from Roxana &amp; Farzin Mokhtarian<\/p>\n<p class=\"p1\">Servings: 4-6<\/p>\n<p class=\"p1\"><b>Ingredients:<\/b> basmati or long-grain rice, 200 grams; herbs (parsley, mint, coriander, spring-onion ends), 1 kg; ground lamb or beef, 500 grams; split peas, 3 tablespoons; pomegranate paste, one glass; marjoram, 2 teaspoons; mint, one teaspoon; 4 large onions; cooking oil; salt; black pepper<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p1\"><b>Directions<\/b>:<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p1\">1. Peel and slice two onions and fry in oil until slightly golden. Add 4-5 cups of hot water, split peas, salt, and pepper and cook over low heat for about 10 minutes. Wash rice and add to the aash. Cook for another 15-20 minutes.<\/p>\n<p class=\"p1\">2. Peel and grate two onions. Add to meat with salt and pepper and mix well. Shape into small balls and add to the aash. Wash herbs, chop finely, add to the aash, and cook for another 15-20 minutes. Add in pomegranate paste and marjoram (if fresh marjoram is used, it should be finely chopped). Mix well and cook for a few more minutes.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p1\">\n3. Saut\u00e9 mint in oil for a few minutes\u2014keep an eye on it for it burns quickly (if fresh mint is used, it should be finely chopped before).
