To be a good cook is one thing and to be a great presenter is another.<span class=\"Apple-converted-space\">\u00a0 <\/span>She was both.<span class=\"Apple-converted-space\">\u00a0 <\/span>In her memory, I will be presenting some of her recipes in the upcoming issues of <i>Peyk<\/i>, my way of thanking her for the difference she made for our community. She and her late husband, Dr. Cornejo, worked three years to produce this wonderful cookbook.<span class=\"Apple-converted-space\">\u00a0 <\/span>May they rest in peace and know how grateful we are to them.<br \/>\n<\/b><\/p>\n<p class=\"p2\"><b> -Noush-e Jan Editor<\/b><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2572 alignleft\" src=\"http:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2021\/11\/Ashe-anr-meatball-399x375.jpg\" alt=\"\" width=\"253\" height=\"238\" srcset=\"https:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2021\/11\/Ashe-anr-meatball-399x375.jpg 399w, https:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2021\/11\/Ashe-anr-meatball.jpg 600w\" sizes=\"auto, (max-width: 253px) 100vw, 253px\" \/><\/p>\n<h4 class=\"p4\"><span style=\"color: #993300;\"><b>Ash e Anar<br \/>\n<\/b><\/span><span style=\"color: #999999;\">(Pomegranate Ash with Meatballs):<\/span><\/h4>\n<p class=\"p7\">Makes 10 servings<br \/>\nStart to finish: 2 \u00bd hrs<\/p>\n<p class=\"p9\">Ingredients:<\/p>\n<p class=\"p11\"><span class=\"s1\"><b>Ash:<\/b><\/span><b> <\/b><\/p>\n<p class=\"p7\">1 cup rice \u00bd cup chopped fresh basil<br \/>\n2 cups chopped fresh parsley 2 cups chopped fresh cilantro<br \/>\n\u00bd cup chopped fresh tarragon 2\u00bd tsp. sea salt<br \/>\n1 tsp. ground black pepper 1\u00be cups pomegranate paste<br \/>\n\u00be cup red kidney beans, washed and drained<\/p>\n<p class=\"p11\"><span class=\"s1\"><b>Meatballs:<\/b><\/span><\/p>\n<p class=\"p7\"><span class=\"s2\">\u00bd lb. ground lean beef\u00a0 1 egg<br \/>\n<\/span><span class=\"s2\">\u00bc cup finely grated onions \u00bd cup chopped fresh parsley<br \/>\n<\/span><span class=\"s2\">\u00bd cup chopped fresh coriander \u00bc cup chopped fresh tarragon<br \/>\n<\/span><span class=\"s2\">1 Tbsp. chopped fresh basil 1 tsp. sea salt<br \/>\n<\/span><span class=\"s2\">\u00bd tsp. turmeric \u00bd tsp. ground black pepper<span class=\"Apple-converted-space\"><br \/>\n<\/span><\/span><span class=\"s2\">\u00bd cup rice soaked in 1 cup water &amp; 2 tsp. salt for 1 hour (then drain and set aside)<\/span><\/p>\n<p class=\"p11\"><span class=\"s1\"><b>Mint &amp; turmeric mixture:<\/b><\/span><\/p>\n<p class=\"p7\">\u00bd cup extra virgin olive oil 1 \u00bd Tbsp. turmeric<br \/>\n4 Tbsp. dried mint flakes<\/p>\n<p class=\"p9\">Directions:<br \/>\nIn a large pot (10 quarts), place rice, kidney beans, 2 \u00bd tsp. salt, 1 tsp. pepper, and add 12 cups of\u00a0water. Cover, bring to a boil over medium heat for 1 \u00bd hours until beans are cooked, stirring occasionally.<\/p>\n<p class=\"p12\">In a small nonstick frying pan, heat \u00bd cup oil, add turmeric, stir for 30 seconds, remove from the heat, and add dried mint flakes. Stir well and set aside.<\/p>\n<p class=\"p12\">Add to the pot the ash ingredients of chopped parsley, basil, tarragon, cilantro, and the mint turmeric mixture.\u00a0 Continue cooking for 20 more minutes.\u00a0 Stir occasionally.<\/p>\n<p class=\"p12\">In a medium bowl, combine all ingredients for meatballs. Mix thoroughly and shape into meatballs the size of a medium tangerine, and add one by one to the pot.
