Polo is prepared exactly the same way as Chelow (white rice recipe <\/i><\/b><b>Peyk<\/b><b><i> #107), but in order to maintain the light, fluffy quality of the rice, boil the rice in polo recipes for only 2 minutes, instead of 3-4.<span class=\"Apple-converted-space\">\u00a0 <\/span>It is important not to over cook the rice, as the other ingredients mixed in any polo recipe will tend to make the rice soft.\u201d In addition to the three main dishes listed here, we can also add Ash e Reshteh (<\/i><\/b><b>Peyk<\/b><b><i> #156).<\/i><\/b><b><i><\/i><\/b><\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-4458 alignleft\" src=\"http:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2025\/03\/Sabzi-polo.jpg\" alt=\"\" width=\"406\" height=\"271\" srcset=\"https:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2025\/03\/Sabzi-polo.jpg 703w, https:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2025\/03\/Sabzi-polo-515x344.jpg 515w\" sizes=\"auto, (max-width: 406px) 100vw, 406px\" \/><\/p>\n<h3 class=\"p1\"><span style=\"color: #993300;\">Sabzi Polo\u00a0<\/span><\/h3>\n<p class=\"p3\">Preparation time: 1 hour<br \/>\nServings: 6-8<\/p>\n<p class=\"p3\"><span class=\"s2\"><b>Ingredients<\/b><\/span>: 3 cups dry rice; 3 cups chopped parsley; 3 cups chopped spring onions; 1 cup chopped dill; 3 teaspoons liquid saffron; \u00bc cup butter; 2 cups water; \u00bd teaspoon salt<\/p>\n<p><span class=\"s2\"><b>Directions<\/b><\/span>:<\/p>\n<ol>\n<li>Cook rice (see Peyk #107, Chelow) for 2 minutes.<\/li>\n<li><span class=\"s1\">Just before draining the rice, add the chopped greens (except for dill), stir gently, boil for 1 minute, and drain in a colander. Mix the chopped dill gently with drained rice. Add salt.<\/span><\/li>\n<li><span class=\"s3\">Melt \u00bc cup butter in the cooking pot and add \u00bc cup water to it.<\/span><\/li>\n<li>Add rice mixture to cooking pot.<\/li>\n<li>Pour the \u00bc cup of melted butter with \u00bc cup of water over the rice, then cover the pot with the lid.<\/li>\n<li>Cook for 45 minutes on low heat.<\/li>\n<li>To make tahdig (rice crust), cook rice for an additional 15 minutes on medium heat.<\/li>\n<li>Remove 1 cup of the rice from the top of the pot and save on a separate plate.<\/li>\n<li>Add 1 teaspoon liquid saffron to the plate and mix gently with the rice. Reserve for garnish.<\/li>\n<li>Add another teaspoon of liquid saffron to the pot and mix gently.<\/li>\n<li>Spoon out rice out onto a serving platter, garnish with the saffron rice (step #9), and serve.<\/li>\n<\/ol>\n<h3><span style=\"color: #993300;\">Fried White Fish<\/span><\/h3>\n<p>Preparation time: 1 hour<br \/>\nServings: 6-8<\/p>\n<p class=\"p3\"><span class=\"s2\"><b>Ingredients<\/b><\/span>: 2 small white fish; 2 eggs slightly beaten; flour for dredging; \u00bc teaspoon salt; 1\/8 teaspoon pepper; oil for frying; \u00bc cup chopped parsley; 6-8 lime halves<\/p>\n<p class=\"p3\"><span class=\"s2\"><b>Directions<\/b><\/span>:<\/p>\n<ol>\n<li>Wash fish, cut into 3 inch long pieces.<\/li>\n<li>Mix flour, salt, and pepper.<\/li>\n<li>Dip fish in eggs and roll in flour mixture.<\/li>\n<li>In a skillet, fry fish in oil on both sides and drain on a paper towel.<\/li>\n<li>Garnish with lime halves and parsley.<\/li>\n<li>Serve with Sabzi Polo.<\/li>\n<\/ol>\n<h3><span style=\"color: #993300;\"><span class=\"s4\">Kookoo Sabzi <\/span> (Fresh Herb Quiche\/Souffle)<\/span><\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-4457 alignleft\" src=\"http:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2025\/03\/Sabzi-polo-mahi.jpg\" alt=\"\" width=\"345\" height=\"345\" srcset=\"https:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2025\/03\/Sabzi-polo-mahi.jpg 345w, https:\/\/peykmagazine.com\/en\/wp-content\/uploads\/2025\/03\/Sabzi-polo-mahi-70x70.jpg 70w\" sizes=\"auto, (max-width: 345px) 100vw, 345px\" \/><\/p>\n<p>Preparation time: 45 minutes<br \/>\nServings: 8 wedges<\/p>\n<p><span class=\"s2\"><b>Ingredients<\/b><\/span>: 4 cups chopped parsley; 4 cups chopped spring onions; 1 cup chopped Chinese parsley; 1 cup chopped dill; 4 green lettuce leaves; 7 eggs; 1 teaspoon baking soda; 1 tablespoon flour; 6 tablespoons oil; \u00be teaspoon salt; \u00bc teaspoon pepper; \u00bd teaspoon turmeric; \u00bd teaspoon cinnamon<\/p>\n<p class=\"p6\"><span class=\"s2\"><b>Directions<\/b><\/span>:<\/p>\n<ol>\n<li class=\"p6\">Chop dill and lettuce leaves finely by hand.<\/li>\n<li class=\"p6\"><span class=\"s3\">Chop remaining vegetables in a food processor or by hand.<\/span><\/li>\n<li class=\"p6\">Heat 3 tablespoons of oil in a large skillet, then saut\u00e9 vegetables and set aside.<\/li>\n<li class=\"p6\">When cool, mix vegetables with remaining ingredients (except oil) in a large bowl. Beat with an electric mixer for 3 minutes.<\/li>\n<li class=\"p6\">Preheat the oven to 350 degrees.
